Next add in 1/2 cup of cocoa powder plus 1 teaspoon of vanilla extract and salt to taste, stirring constantly until mixture becomes thickened paste called “cacao nibs”.
Remove from heat If mixture seems too thin, add more cocoa powder but no more than 1/4 cup at time. Now pour this mixture into a large mixing bowl, Next put your clean dry mixing bowl onto your mixer fitted with paddle attachment & turn it on medium speed.
Pour soften butter /cocoa mixture into dry bowl & mix on medium speed for 3 minutes, scraping downsides occasionally.
After 3 minutes, turn off mixer & let batter rest for 2 minutes.
Cocoa Powder or Butter?
